Ingredients

  • chicken legs - 311g
  • carrots - 4 carrot (184g)
  • parsley root - 2 medium (121g)
  • celery root - 113g
  • onion - 1 small (60g)
  • water - 68 fl oz (2012g)
  • salt - 2 tsp (12g)
  • black pepper - 0.5 tsp, ground (1.2g)
  • parsley - 1 bunch (10g)
  • egg noodles - 7 wt. oz (198g)

Cooking steps

1.) In a sturdy cooking pot, place the succulent chicken drumsticks, generously covering them with fresh, cold water. Then, set the pot over the flame, and patiently await the magic of simmering.

2.) When the water comes to a boil, add the salt and diligently skim off any foam that forms on the surface as often as necessary.

3.) We add the peeled onion, carrot, root parsley, and celery, and continue skimming off any remaining foam as needed.

4.) We let the meat and vegetables simmer for about an hour or until the meat is fully cooked. If you're using farm-fresh meat, it might require a longer cooking time. You can add hot water as needed, but it's crucial to ensure the water added is hot.

5.) We remove the meat and vegetables from the soup, dice a few pieces of carrot, and then add the noodles. While dried noodles can be pre-boiled in a separate pot, I prefer to cook them in the soup, as it imparts a much richer flavor.

6.) We let the noodles simmer for a few minutes, the exact time depends on the type of noodles you're using. In my case, I've chosen homemade egg noodles, which require just a short cooking time.

7.) We turn off the heat and then add ground pepper and finely chopped fresh parsley.

8.) The chicken used in the soup can be diced and added back to the soup, or you can use it to prepare a delicious tomato sauce to serve as the main course.
