  • capers - 4 tsp (10g)
  • green onion - 1 large (25g)
  • garlic - 2 cloves (6g)
  • red hot chili pepper - 0.3 pepper (10g)
  • basil - 10 leaves (5g)
  • extra virgin olive oil - 2 tablespoon (27g)
  • sea salt - 1 tsp (6g)
  • black pepper - 0.5 tsp, ground (2g)
  • water - 1 cup (200g)

Cooking steps

1.) Begin by filling a pot with water, covering it with a lid, and heating it over high heat.

2.) While the water is heating, peel and finely chop the garlic, chili, and green onion leaves.

3.) Once the water starts boiling, briefly submerge the washed tomatoes in hot water, making it easier to peel them.

4.) Add a pinch of salt to the water and add the pasta to boil. Pasta doesn't require oil in the water to prevent sticking; all you need to do is stir occasionally once the pasta is added and starts boiling.

5.) In a preheated pan, add two tablespoons of olive oil, finely chopped garlic, and chili, frying them for about a minute, being careful not to burn the garlic.

6.) Add the peeled and diced tomatoes, chopped onion leaves, and lightly crushed capers to the pan.

7.) After about a minute, add a bit of the pasta cooking water to the sauce and let the tomatoes simmer over medium heat until the pasta is cooked al dente.

8.) Pour the cooked pasta into the tomato and caper sauce, keeping it over medium heat for two more minutes, stirring carefully to avoid breaking the pasta. To ensure the pasta absorbs the flavors of the sauce, it's recommended to transfer it directly from the boiling water to the sauce without rinsing it with cold water.

9.) Turn off the heat and sprinkle finely chopped basil leaves over the pasta.
